Our long-ferment, old world style breads reflect our commitment to creating real bread. As the Romans, the Italians, and many other peoples have known for millenia, real bread is good for you!

The story of bread is the story of civilization, and the long-ferment technique was once the only way to make bread. We use the best Northwest grains, fermented with local herbs, fruits, and spices. Our customers, local, tourists, and foreign visitors, often comment, “This is the best bread I have ever had!”
